David
Hawksworth, who is the very creative and celebrated chef at the restaurant
bearing his name in Vancouver’s Hotel Georgia, is partnering with Air Canada to
design meals for the carrier’s International Business Class ex Canada as well
as Maple Leaf lounges.
As AC
focuses on their international route development, effective 01OCT their Biz
Class offerings will be highlighting exclusive seasonal selections created by
Chef Hawksworth.
The
setting to unveil Hawksworth’s special menu items was an elegant affair at Toronto’s
Royal Conservatory of Music. The A-list guests were tempted with a few of
Hawksworth’s exclusive creations for AC including smoked trout Niçoise salad
with roasted garlic aioli as well as yellowfin tuna tataki, scallion ginger
vinaigrette, passion fruit & puffed rice. Beautifully presented, the
intricate taste combinations leave no doubt that you are enjoying the product
of a very high end restaurant.

A native Vancouverite who
spent a decade honing his talents in Europe working in Michelin-starred
kitchens such as
Le Manoir aux Quat' Saisons, L'Escargot and The
Square
, David Hawksworth has emerged as one of Canada's leading culinary
talents. In 2008 David was named to Western Living's
'Top 40 under 40' and
became the youngest chef inductee in to the
BC Restaurant Hall of Fame. In
2013 he launched the
Hawksworth
Young Chef Scholarship Foundation
, which annually awards $10,000 to
boost the career of a young professional chef.
